"CHINESE" PIE

This one-dish meal doesn't have anything to do with Chinese food. Originating more than a century ago in Canada, it came from Chinese immigrants making do with ingredients from their new environment.
This is one of the recipes my college roommate's mother tested on the two of us on one of our visits. She was always trying new recipes. We were her taste testers giving her either a thumbs up or a thumbs down for each new dish.
I enjoyed her Chinese Pie recipe so much I made it for my parents. It was a favorite dish in our family for years.
It's quick and easy-my kind of recipe! For a single or couple, you'll get at least two meals out of it.
RECIPE:
1 (2 qt) casserole dish
1 pound lean ground beef
salt and ground black pepper to taste
small amounts of onion powder and garlic powder (optional)
1/2 medium onion, diced (optional, but it gives it more flavor)
1 (15 ounce) can cream-style corn
4 cups mashed potatoes (I use about 4-6 potatoes depending on size)
Notes: Sometimes I use a package of pre-made mashed potatoes if I'm in a time crunch.
Prepare them according to the package-normally microwave them for a few minutes then stir them.
Instant mashed potatoes do not work well with this recipe.
Directions:
Preheat oven to 350 F. degrees.
Cook and stir onion until translucent, about 5 minutes. Stir ground beef into onion, season with salt and black pepper, and garlic powder and onion powder (if using).
Cook ground beef mixture until browned and crumbly.
Drain excess grease.
Spread cooked ground beef mixture into bottom of the casserole dish.
Pour cream-style corn over the ground beef in a layer.
Top with layer of mashed potatoes.
Bake in the preheated oven until potatoes start to brown and casserole is bubbling around the edges,
about 30 minutes.
